Spinch Citrus Fruit Salad
4 C firmly packed spinach leaves (6-oz packaged), washed
1 C orange sections
1 C grapefruit sections
1/4 large or 1/2 small Bermuda onion diced
Dressing follow
1. Place washed bit size spinach leaves into a salad bowl
2. Open canned Mandarin Oranges and grapefruit. Drain and save juice
3. Or use fresh fruit that has been peeled and sectioned. Be sure to also remove the white pith,
4. Peel and dice the Bermuda onion
5. In a bowl toss spinach, fruit and onion together
Creamy Dressing
1/4 C mayonnaise
1/3 C honey
1 Tbsp grated orange rind
3/4 tsp orange juice
1/4 tsp ginger
1. Combine all ingredients to mix
2. Chill to blend flavors. Makes one cup
Walnut Wafers
Mom would make these for us when we were children. We had an English walnut tree as well as Black and Almond. With all those nuts available these cookies worked out great. I too have enjoyed making
3 eggs
1 tsp vanilla
1 C light brown sugar
1 C flour
1/4 tsp salt
1-1/2 C chopped nuts
1. Beat eggs lightly
2. Add vanilla stirring to mix
3. Thoroughly mix in sugar
4. Carefully stir in flour with salt
5. Stir in nuts
6. Drop by teaspoon onto cookie sheet
7. Bake in a 350 degree oven for 8 minuets
Johnnycake Corn Bread
When we moved to the Southern part of the country, one of the first outings we did was a trip to an old grain water wheel store. We learned how it operated, the history behind its operations, the appreciation for it’s continue existence, and the option to purchase fresh crushed grains. There was not only fine crushed but several other categories. One of my purchases was corn. That set off a search for all those delicious Southern corn recipes. This is an adoption that ranks high with my family.
1- 3/4 C flour
1 C corn meal
3- 1/2 tsp baking powder
3/4 tsp salt
3 eggs
1- 1/4C milk
1/2 C molasses
1/2 C melted margarine or oil
1/2 baking soda
1. Combine top 4 dry ingredients in a large bowl set aside
2. In another bowl whip the eggs
3. Stirring after each new ingredient
4. Add the rest of the liquid ingredients and baking soda addition
5. Pour the egg mixture all at once over the dry
6. Mix only until all the flour mixture is dampened
7. Batter will be thin
8. Pour in greased 8 x 12 inch pan
9. Bake in preheated 350 oven for 30 min
Will withdrawal from side of pan and prick in center comes out clean
Variations for this Recipe
1. Maple syrup may replace molasses or 2 Tbsp brown or white sugar
2. Increase baking powder by 1/2 tsp and skipping the soda
3. Changing the relation of the flour to the corn flour; a 50-50 combination is nice
4. When using buttermilk in place of sweet milk increase the baking soda to 1 tsp and baking powder down to 3 tsp
Very Healthy Turkey Chilli
My son’s mother in law from North Carolina sent this recipe to me. It is her spouse’s specialty. He all so does the cooking.
I’m not certain how old or long it has been used. This is a new one for me using ground Turley.
One of my dancing friends has started a recipe exchange. I am trying to pass this exchange along and see if I can obtain a few new recipes to add to my collection.
3 lbs ground turkey 7% fat
2 Tbs coconut oil or olive oil
2 large bell peppers, diced
2 average sweet onions, diced
4 cans (16 oz.) red or pink kidney beans (can be mixture – do not drain)
2 cans (16 oz.) diced chili recipe tomatoes
1 jar of chili powders (or to taste)
8 Tbs. dark molasses
1. In a large stock pot, brown turkey in oil until raw look is gone
2. Add peppers, onions, beans and tomatoes and bring to a boil
3. Stirring regularly to prevent sticking
4. Reduce heat to simmer, cover and leave for hour or so
5. Add chili powder and molasses
6. Continue on simmer for another 30 minutes
7. Lid may be loose to allow thickening or keep tight for less thickening
8. Remove and serve over rice or alone
9. When cooled can be packaged for later use either in the freezer or refrigerator
10. Packaging in pint containers makes 2 servings
Unusal Candy Cookie
A friend passed this along to me. It is a quick and easy cookie or candy recipe that uses crackers in place of flour.
In my house by the end of a month there generally wasn’t much money left over for groceries. Since I baked my own bread and crackers were reasonable I always had some left in the pantry for use.
These cookies were one way I could make a sweet for school lunches.
2 C sugar
2/3 C milk
1/2 C crunchy peanut butter
1 tsp vanilla
2 C coarsely broken soda crackers
1. Bring sugar and milk to boil in a sauce pan
2. Boil for 3 minutes
3. Remove from heat to cool slightly
4. Add peanut butter and vanilla
5. Stir in to completely combine
6. Add soda crackers
7. Make sure they are well mixed
8. Drop by spoonfuls onto wax paper
9. Let cool. Enjoy.
Tamale Pie
Tamale Pie was a stand by at my house as a child.
It makes a quick complete oven meal that can be served with a salad and crunchy bread. How does a Latino salad with sliced avocado and orange slices sound.
You can make the Tamale Pie as spicy or mild as your taste buds dictate.
1 lb ground beef
1 lg onion chopped
1 sm green pepper chopped
2 cloves garlic minced
1/2 tsp salt
1/4 tsp black pepper
2-3 tsp chili pepper
Dash of hot pepper sauce
1 lg can tomatoes
1 can whole kernel corn drained
1/2 C yellow corn meal
1 C milk or water
Sm can slice black olives
1. Grease 12 x 7 1/2 x 2 inch oven dish, set aside
2. In a large skillet brown meat
3. Add the next 3 ingredients cook until tender
4. Stir in seasonings, tomatoes and corn
5. Cover: cook 5 minutes to blend flavors
6. Mix the corn meal with liquid
7. Stir this mixture along with the olives
8. Scrape into prepared pan
9. Bake in 375 degree oven for 30 minutes
10. Or until knife inserted in center comes out clean

Apple Coffee Cake
I have a basic white cake I used all the time in several different ways.
One was to add some of the extra fruit I had in the summer months. Fresh or dried fruit could be used and inter changed.
Here is a Coffee Cake that represents me using the dried fruit.
2 Tbs butter
3/4 C sugar
1 egg
3/4 C flour
1 tsp baking powder
Pinch salt
1 C dried apples
1/2 C chopped nuts
1 tsp vanilla
1. Cream butter with sugar
2. Add well beaten egg
3. Combine and add flour, baking powder and salt
4. Make sure it is mixed in completely
5. Add dried apples, nuts and vanilla
6. Bake in a greased 8 x 8 inch square pan
7. In a 350 degree oven for about 30 min
8. Check for doneness by sticking tooth pick in center of cake
9. The toothpick should come out clean
10. When cool sprinkle the top with powder sugar
Chocolate Dessert Bread
This makes a delicious loaf of chocolate bread to serve when folks drop in for a visit. Like mom’s Nut Cake bread we used this Chocolate Bread as an after school treat for the kids, as a dinner dessert or for a Holiday.
A good spread would be butter, cream cheese or Orange Marmalade.Try mixing your favorite jam in the butter or cream cheese.
A scoop of vanilla ice-cream is a good go along. Nuts could be added and what about chocolate chips. Yummy
3 C flour
3 tsp baking powder
1 tsp salt
1 C brown sugar firmly packed
1 egg well beaten
4 Tbsp melted margarine or oil
1 and 1/4 C milk
2 squares Unsweetened chocolate melted
1/2 C chopped nuts
1. Sift flour
2. Add salt and baking powder; sift again
3. Mix in the brown sugar with the flour mixture
4. Stir the egg and margarine or oil together then
5. Combine this mixture with the dry ingredients
6. Gradually add the milk mixing well
7. Mix in the melted chocolate
8. Stir in nuts
9. Scrape into a greased and floured loaf pan (8 x 4 x 3)
10. Bake in mod oven 350 degrees for 1 hour 15 minutes
Or until toothpick inserted in center comes out clean
Saturday Night Special
Here is an oldie.
Can’t remember how many times I have made this over the years.
You have all the ingredients to make it on hand. It can be made on top of the stove or baked in the oven. Either method can be presented with a side dish salad, vegetable, or desert. I have a thicker sauce with left over’s to server over sliced toasted
1/4 C butter or margarine
1/4 C flour
2 C liquid
Salt and pepper to taste
1/4 tesp paprika
4 hard cooked eggs diced
1 C cooked diced ham
1. Melt butter or margarine in medium size pot
2. Add flour stirring to combine
3. Slowly pour in the milk stirring continually
4. Keep stirring until thickens
5. Add the diced eggs, ham and paprika
6. Taste before adding the salt & pepper
7. The ham has its own salt so be careful
8. You don’t want the pepper to be over powering
Fry Pan Chocolate Pudding Cake
When we helped a family member build their house, my contribution was cooking dinner.
This meant bringing two fry pans and an extension cord. There was no stove available as the house was just being built. One fry pan was for meat, potato and vegetables. The other fry pan was for dessert.
This is a version of the oven Pudding Cake revised for a frying pan.
1 1/2 C unsifted flour
1 1/4 C sugar
3 Tbs cocoa
3 tsp baking powder
1/4 tsp salt
3/4 C milk
3 Tbs oil
2 tsp vanilla
1/2 C chopped nuts may be added
1. Stir dry ingredients in a bowl to mix
2. Add liquids stirring to combine
3. 1/2 C chopped nuts if using
4. Spread batter in greased 12 inch electric fry pan preheated to 275
Combine in a bowl
1 C packed brown sugar
1/2 C baking coca
2 1/2 C hot water
1. Place sugar and cocoa in a bowl
2. Pour boiling water over
3. Stir until sugar is dissolved
4. Gently pour over batter
5. Cover: bake with vent closed for 15-18 minutes
6. Check to see if top springs back when lightly touched with finger
7. Spoon out putting sauce over serving
